Ears flopping and tails wiggling, the wild boars file into an enclosure and look expectantly at their master. It’s hardly the type of be- havior expected from the animals which are considered by many to be among the thost ferocious of wild beasts. But Swennen says their seemingly tame behavior is misleading and they are still very much a wild animal. “They don’t look as if they're much different (from a domestic pig), but their wild extinct is still there,” said Swennen, who runs a 32- hectare farm where he and his wife, Beatrice, raise wild boar for the gourmet food and is a protected species in many European countries. Swinnen grew up in south- eastern Belgium where the European boar live in the wild and, after witnessing the success his brother Leon was having raising wild boar in Quebec, he decided to in- troduce the breed in Western Canada. Less than two years later, and with about 150 of the animals on his farm 110 kilometres southwest of Win- nipeg, Swennen is unable to keep up with demand, Most of the meat — sold both as suckling piglets and cuts from mature animals — is shipped outside of Mani- toba, Swennen says. Van- couver is currently the major market, but he says a broker in Eastern Canada is nego- trice says it tends to be dry. For this reason, she recom- mends’marinating, and cook- ing by moist heat methods such as braising, pan-roast- ing or stewing at low tem- peratures. Her favorite way of pre- paring it is on the barbecue, but “it also makes good sweet-and-sour spareribs, bacon and ham,” she said. “We eat it every day, it's easier to digest than regular pork.” Roast suckling pig is an impressive dish for a special al tiating for shipments to Jap- §7 Ford the whole animals at the farm gate for $6.60 a kilogram live weight. Louis Joseph Gautron, a St. Claude area resident who has compiled a booklet on how to cook wild boar, says it is no more difficult to cook than a turkey. He says a piglet may be roasted either as is, or with a stuffing flavored with celery, onion, thyme, bay leaf and sage. The piglet should be thoroughly cleaned inside and out, and the eyeballs removed. @ Dealerships available for vinyl sundeck colltags, Col Felicon naming oF trade.
