How things do change If you turn 180 degrees now and look north from your cross. roads position you will see the railway overpass bridge (wood) with the Royal Canadian Legion building on the left. Directly across the bridge is Alex Ere menko's butcher shop and dance pavilion (Castlegar News), while beyond it on the same side of the road is the Castle Theatre, the Castlegar Co-op, Transportation Society garage, the Castlegar-Rob son cable ferry and Donnan's Auto Count, overlooking the ferry ramp. On the left is the ever-popular Rigby’s confectionary (Hi Lite) and Ozeroff's Jewellers (long erhpty). Memory is a tricky friend (particularly mine) and most of these things are gone now or buried in reconstruction. Forty five years ago Castlegar was a small, isolated rur. community, built on a litter of glacial deposits and deep river gullies and almost impossible to find on map of that time. Much has changed much is changing now, but the memories of its people, my good friends, and its friendly places are still warm and without number, And, I'm still glad I came so long ago— or was it the day before yesterday? Cook macaroni according to package directions. Drain 2. Run cold water over macaroni. Let stand while prépar ing other ingredients 3. Combine mayonnaise with mustard, salt, black Pepper, celery seed, pickle juice 4. Add all other ingredients to macaroni. 5. Blend mayonnaise mixture with macaroni mix 6. Refrigerate until serving time OVEN FRIED CHICKEN Temp: 350 degrees Serves: 6 cooking Time: 1 hour Ingredients 6 Ibs. chicken, cut up, skin on or off 1 1/2 cups crushed comflake crumbs 1/4 cup melted butter Dipping Mix 1 cup sour cream 2 tbsp lemon juice 2 tsp worcestershire sauce | tsp celery salt or spike I tsp paprika 3 cloves crushed garlic 1/4 tsp pepper 1/4 tsp salt (optional) 1. Wash and wipe chicken pieces with Paper towels 2. Pour crumbs into a flat dish 3. Mix dipping ingredients 4. Dip each piece of chicken into dipping mixture, then in crumbs 5. Arrange in a large greased shallow pan, in one layer only 6. Brush pieces with melted butter 7. Bake uncovered at 350 for | hour or until chicken is tender.
