We were moving to a new project in the Cariboo, and, once again. it was my responsibility to find a home, Over the years I have become much more adept at this task than in the beginning of our life on this road. I found a sympathetic real estate agent who did not give up in despair at the very thought of leasing a house in an area already buzzing with con- struction activity. There was a house available, an old fishing lodge, renovated imo a pleasant home. on a small lake, but it was rather far out of town How far is rather far out of town?” I asked Well, about five miles!” That's not far” I thought, having often travelled mach farther. We decided to have a look at the house. It was a lovely sunny, October day. Warm, ~ but with that certain crispness that indicates autumn in the Cariboo. There was a faint scent of burning leaves in the air, and the smokiness that signals autumn weather inversions. We drove down a wind- ing tree-lined lane. The maples, birch and aspen, were dressed in their best autumn colours, Nestled in dappled sunlight among the trees at the edge of the lake was a charming log building. Scattered about the six acres were various out-buildings, a garage, several sheds, a barn and a chicken coop. The spa- cious lawns were trimmed and there was a fresh coat of paunt on the front porch “We'll take it!” I whispered in my husband's ear. “Better wait until you see inside!” replied my more Pragmatic spouse Of course, we did lease the premis- és. We bought a canoe so we could enjoy the lake, and we repaired the dock We acquired a large, hairy dog, a Bnard, called Pepsi I found a job on the construction site with a cladding contractor and life became very pleasant indeed as winter set in and passed. In the spring. the grasses began to grow And grow. While complaiming about the “hay fields” one day at work, my boss suggested that what we needed were a couple of horses! He owned many Standard Bred Pacers, but i just so happened he had two in foal, both saddle bro- ken and badly in need of exercise. A deal was struck We remted a horse trailer and went to fetch our “bor- rowed™ horses. Neither of us were prepared for what tumed out to be a very eventful summer. It took us one whole weekend to bring them home, the greater part of which was spent trying to persuade the two mares to walk imto the horse trailer! For pacers who had been ferned back and forth to the track, these two were exceedingly trailer-shy, or Seasons were they putting us on? They were so anxious in the trailer, stamping from side to side, they threat- ened to dump all of us into the Fraser Canyon. We had to stop and “drug” them with Dr. Bell's! The “saddle broken” description also turned out to be a myth, as neither horse had been trained to a neck rain. Neither horse had ever been outside a smooth Fraser Valley pasture either! They would come to a fallen tree, stop dead, and proceed to whimper. No, I , don't mean whinney, I mean whim- per! Over the summer, the Elma two horses Maund would bid us farewell in the mornings as we drove off work. On returning in the evening they would be waiting for their exercise and oats. The younger mare had a great affection for my husband. She would peer into the open window of his pickup, looking for a pat and a kind word. Mine was more aloof. She would never design to show any preference. We both came Proficient at pitching hay, repairing tack and repairing cuts and sores. As I did not have any hay allergies, I did the lion's share of the haying, thereby ensuring that our ranching days would be short lived. In the autumn we rented another horse trailer in Preparation to return the two ladies to the Coast. We could not get either of them to enter the trailer. We enlisted the assistance of a friend who had forgotten more about horses than we will ever know. To no avail! These two stubborn mares were not going to get into that trailer We gave up and went to have a coffee. Upon our return, prepared to use a 2X4 if necessary, the two mares looked at us as if to say “Oh! You want us to in there? Well, why didn’t you say so!” They promptly walked calmly right into the trailer! We threw up our hands! The time came for us to move on. We stored the two saddles and all the tack we had acquired, and moved # about with us until finally, just this spring. *we decided we would probably never again have access to two horses. The saddles and gear were sold to a local equestrienne, not without a little sadness that another phase of our lives has passed. Still, we have fond memories of our horses in the Cariboo! Melt butter, add mushrooms, onions and celery, saute for 2 minutes. 2. Add shredded cabbage, saute till tender. 3. Add tomatoes and saute with vegetables for 2 minutes or so 4. Remove from stove, add half the cheese and mix well 5. Spread vegetable mixture into the dough-lined prepared pan 6, Beat eggs, add milk and seasonings, pour over vegetable mixture. 7. Sprinkle remaining cheese over top and bake for 40-45 minutes, until set. 8. When baked, let stand about 10 minutes before serving, NOTE: If you are using frozen puff pastry: a top crust, rolled out and placed over the cheese and filling is very nice. Bake as directed. CRUNCHY SUNFLOWER COLESLAW 1/2 Medium head cabbage, shread. 2 carrots, grated 1 red or green pepper, chopped Dressing “1/2 cup mayonnaise 1 tsp dijon mustard 1 tbsp sugar 2 tbsp lemon juice 1/3 cup sunflower seeds, lightly roasted 1. Mix together the shredded cabbage, carrots and pepper 2. Mix all dressing ingredients together, and combine with the cabbage mixture. 3. Let sit in fridge for about 2 hours for flavors to blend 4. ‘Whien ready’ to servé, mix in sunflower seeds FRESH SAUERKRAUT 3 cups shredded cabbage, firmly packed 1 small beet, grated (opt) I tsp coarse salt 1 tsp fresh dill 1. Mix shredded cabbage and finely grated beet together (Don't use beet if you don’t like colored sauerkraut) 2. Sprinkle the salt over the cabbage and rub it in with your hands till the salt is dissolved. 3. Wrap dill into a piece of cheesecloth 4. Pack cabbage firmly into a jar (placing the wrapped dill in the middle for flavor to absorb). 5. Leave jar sitting on counter for about 3 days until the cabbage is soured to your taste, then place in fridge. Keeps for a long time. NOTE: Recipe can be doubled or tripled.
