Inrecent years, the Pine Mufghroom, Armillaria pon- drosa, has been harvested in B.G and sold to Japan as a popplar delicacy. Apparent- ly, Jt resembles very much theB Matsutake, also a Jap- anese delicacy and therefore confmands a very high price on the Japanese market, Last year, an air cargo *jet {was flying out of Van- couver airport daily for To- kyo full of B.C. grown Pine mushrooms which were’har- vested around the province by an army of profit-seekers. The exporters were pay- ing as much as $4 a pound for good quality mushrooms and couriers were making almost $1000 a trip to overnight them to the waiting cargo plane in Vancouver. In recent years, the po- tential for picking and ex- porting the mushrooms has been recognized and _ this year, we have seen the upstart of several new com- mercial operations. In case you are thinking of joining the army of pick- ers, this identification guide may be of help. The Pine mushroom has an overall white appearance with the cap becoming cin- namon tan, The cap is round- ed, then flat, and up to 25 em (10 inches) in diameter, and the flesh is white and firm and has a spicy odour. The gills are crowded and adnexed (broadly notch- ed where they are attached to the stock) and the stock is annulate, which means it has a ring left by the breaking of the inner veil. The pungent, aromatic odour of the Pine mushroom is a distinguishing feature that is not easily forgotten. In some areas, it also grows with fir, hemlock and spruce, but it is not known to as- sociate with hardwoods, such as alder and maple. The mushroom appears’ in late os August and continues to fruit - for about two months, or until the first heavy frost. Traditionally, the Jap- anese-Canadians who have harvested this product local- ly, have been most commonly seen in the Galena Bay area, or around Fauquier. There has also been a lot of picking in Mosquito Valley. However, pickers from the last year indicated that the mushroom is common to nearly all areas in the district and can be found near access roads all over B.C. There are a few tips offered by the B.C. ministry of agriculture to ensure that the product is kept in peak condition until it reaches the Japanese market or your home freezer, They should be picked whole, including the bulbous portion which grows under- ground, A person should wipe the dirt off and check for worms; discard any wor- my specimens as good mush- rooms in the same picking could become infested. Put the picked mush- rooms in a shallow, open basket so that they remain cool, can breathe and are not crushed. If you're picking large amounts of mushrooms, hold them in low, flat -con- tainers which can be stacked with the container... not the mushrooms, . . supporting the weight. To maintain freshness and high quality, put ferns or leaves between layers of the mushrooms.
