E4 Castlegar News december 11, 1985 Home brew alternative to store bought beer WINNIPEG (CP) — When Tom Brooks. first arrived in Canada from England almost 20 years ago, one of the first things he noticed was the . overly sweet taste of ‘this country’s: beer. “I tended not to like the Canadian beers,” he said_in an interview. : So Brooks, an accomplish- ed winemaker, set to work brewing his own. His first batch was “rather raw” because he was in a hurry and was using cheap ingredients, he said. “The only place for it was the kitchen sink, unless I wanted to use it for catching slugs in the garden.” But, after 10 years, Brooks perfected his technique and recently placed second in an amateur brewing competi- tion. He's one of about 150,000 Canadians who are brewing their own beer as an alter- native to the store-bought variety. Until recently, home- brewers had to obtain writ- ten permission from Revenue Canada to make their own beer, but the federal gov- ernment lifted the restriction during its budget last May. THREAT OF JAIL New Democrat MP Mi- chael Cassidy had called for changes to little enforced sections of the Excise Act that also made it a crime to serve unlicensed home-brew to ests.. There are no similar restrictions on home- made wine. Cassidy, an avid home- brewer who said he made his first batch in a university res- idence . bathtub, said the penalty for breaking the ex- isting law — a $100 fine or three months in prison — was excessive. The potential for a second offence is a fine of $250 or six months in prison. “It, seems a bit excessive for an activity which is in- nocently carried out by a large number of Canadians . . . and which produces a pro- duct which is healthy and in- vigorating.” he said. It is estimated the home- brewing industry did $6.5 million worth of business last year. Home-brewers say their beer is cheaper to make and better tasting than the popu- lar brands sold in liquor stores. Madge Baril, who owns the Wine Baril, a wine and beer- making store in Winnipeg, said depending on the malt, the production cost varies between 16 and 20 cents a bottle. “With a kit, you can penake five dozen cases of beer for the price of buying one,” she said. “It starts as a hobby with most people. But then they like the flavor, so they keep it up. You can't buy that qual- ity.” Joe Swarek, secretary of the Fermented Fruits, a wine and beer-making club, said home-brew also has a longer shelf life. Home-made beer in the bottle can last two years, while commercial beer gen- erally spoils after three months. “Best of all, home brewing in the modern style is easy,” Swarek said. ~ Swarek said the primary method for making home brew is to simmer a gallon of malt extract, water and hops on the stove for an hour, strain it inot a plastic pail with water, sugar and finish- ing hops, then add yeast. After” the “mixture_is_al- lowed to ferment for about two weeks and mixed with clearing agents, it can be bottled. Answer to Sunday Crossword ,Puzzle No. Fraser went too far OTTAWA (CP) — The Su- preme Court of Canada, dis- missing an appeal by fired tax auditor Neil Fraser, said Tuesday that public servants “must exercise caution when it comes to making criticisms of the government.” Fraser, who had been a corporation tax auditor for Revenue Canada in Kingston, Ont., was fired Feb. 23, 1982, after what his superiors called a month of “sustained and highly visible attacks on government policy.” He had been d for: three days after criticizing: the federal government's metric conversion program and told to keep quiet. When he made the suspen- sion public at a Kingston city council meeting, he became the subject of national inter- views and his criticism of governmetn policy escalated to include proposals to patri- ate the constitution and in- corporate the Charter of Rights and Freedoms in it.
