And although fat watchers will flinch at the butter-rich treat, it's a © perfect cookie to serve to Christmas and New Year’s guests who drop by for a drink and a snack. It is also a good gift for someone who likes a semi-sweet biscuit with tea or coffee. A friend serves tender-crisp shor tbread morsels with small glasses of dry sherry to her guests — a personal custom every holiday season. Originating in Scotland, shor- thread was once made of oatmeal but now is made with wheat flour For special occasions it can be decorated with candied lemon, orange peel or slivered almonds. It was notched around the edges to signify the sun’s rays. The classic way of making shor- tbread is to press the dough into a Shallow earthenware mould that is decoratively carved. After baking, the large round cookie is turned out of the mould and cut into wedges. More often than not these days, shortbread cookies are formed into simple squares or rounds. In her new cookbook, From Mom ‘With Love, published by Doubleday, $29.95, Kay. Spicer, Canadian food writer and consultant includes her mother’s shortbread which she affec- tionately calls Melting Moments. “As a child that name made these common Christmas cookies far more excitirg and romantic,"’ she writes. The following are two shortbread recipes. One for shortbread cookies is from Spicer’s book. The other is baked in rounds and features walnuts in its ingredients. Walnut Shortbread 250 mL (1 cup) butter, softened 175 mL (three-quarter cup) icing sugar $5 mL (1 tsp.) vanilla 375 mL (1% cups) all purpose flour 250 mL (1 cup) chopped walnuts 12 large walnut pieces Cream butter, icing sugar and vanilla until light. Stir in chopped walnuts. Pat dough into 23 cm (9- inch) pan with removable bottom. Score with fork into 12 pie-shaped wedges. Place one walnut piece on each wedge. Set pan on cookie sheet Skin cancer rates soar OTTAWA (CP) — People who lather on sunscreen believing it will Protect them from the deadly skin cancer known as melanoma are mistaken, says a U.S. research team Indeed, sunscreen may reduce the ability of the skin to protect itself against harmful ultraviolet-A radiation, says the team led by Frank Garland of the University of California school of medicine at San Diego. Small pieces candied cherry In mixing bowl, cream butter and icing sugar until light and fluffy. Stir in flour, cornstarch, baking powder and salt until very smooth. Form in- to a firm ball. Place on lightly floured surface. Lightly knead five to six times. Form level teaspoonfuls (15 mL) into small balls. Place 5 cm (two in- ches) apart on unbuttered baking sheet. With fingertips or fork, gently press each ball to slightly flatten it. If desired, place a cherry piece in centre of each.
