This week I will feature two soups; Hot and Sour Soup 1/4 Ib. lean pork, shredded 4 cups chicken bouillon 8 sliced mushrooms 3/4 cup cooked turnip cut in 1/4” fingers 1 cooked carrot cut in julieane ips 1 small shredded onion 1 tbsp. soy sauce 1 tsp. sugar 1 tep. ground white pepper 2 tbsp. vinegar 2 thep. cornstarch 1/4 cup water 1 egg, beaten 4 chopped green onions Heat bouillon to boiling. Add pork, cook one minute and add mushrooms. Then add onion, carrot, and turnip. Mix vinegar, soy sauce, sugar and pepper. Add to hot broth. Mix cornstarch and water and cook until clear, Remove from heat and beat in beaten egg, stirring constantly, Garnish with green ‘onions. Chicken and Corn Soup (Serves Four) 1 breast of chicken 1 tbsp. wine 2 egg whites 1 can cream style corn ‘“4,cups chicken atock 1 thep. cornstarch mixed with 1 thep. water 1 tbsp. soya.sauce Bone and skin chicken — cut meat into size of corn nibs, Place in bowl with wine and soya sauce, Let marinate for 10 minutes. Heat 2 tbsp. oil'in frying pan. Stir-fry chicken for two minutes. Remove from heat. Bring broth to boil and add salt to taste. Then add corn and chicken. When boiling again, add cornstarch and stir until thickened. Beat egg whites with a pinch of salt until stiff.
