ing it is good for much more
than that.

Pectin reduces cholesterol
in the blood, guards against
heart disease and diverti-
culosis — ailments that occur
in the large intestine — and
promotes growth of bacteria
that attack toxins says Cal-
gary nutritionist Helen Bis-
hop MacDonald in a new
publication co-authored with
Margaret Fraser, associate
food editor of Canadian Liv-
ing magazine.

“We know that certain
types of fibre, pectin in par-
ticular, will attach to bile
acids and ¢ause a reduction in
serum cholesterol levels,”
MacDonald writes in The
Total Fibre Book (Grosvenor
House Press; $12.95 paper-
back).

She says pectin as a water
soluble fibre also counters
bile acids in the intestinal
tract and may protect against

Probably in your fridge.

Pectin levels are highest in
fresh oranges, pears, apples,
papayas, strawberries, ban-
anas, peaches, grapefruits
and lemons. There is also a
good amount in potatoes,
brussel sprouts, broccoli, to-
matoes, lima beans, carrots,
peas, green beans, spinach
and summer squash.

Carrots, in particular,
seem to be a good source,
says a group of Scottish re-
searchers. They found eating
198 grams — seven ounces —
of raw carrots at breakfast
each day for three weeks
