Fresh (unfrozen) turkey should be stored ‘in the coldest: ‘part of the refrigerator and should be loosely covered with wax paper or aluminum foil. It should be cooked within 2-2 days. Frozen turkey can be kept frozen for up to six months. Storage procedures for cooked turkey are different. Cooked turkey should be- stored either in the refrigerator where it may be kept for 3 4 days or in the freezer where it may be kept for 1-3 months. Frozen turkey should be thawed in the refrigerator or in cold water and the plastic wrapper should be kept on no matter which method is used. The refrigerator is the best place for thawing as it keeps the meat cold until it is completely thawed. This cirtually eliminates the possibility of food spoilage organisms accumulating on the meat When the time comes to roast the bird, a roasting timetable for correct cooking time according to the weight of the turkey being cooked should be consulted. thermometer which should be inserted in the thigh wirhout touching the bone or in the middle of the stuffing. It will register 74 degrees Celsius (156 degrees Fahrenheit) when cooked. In private households if no thermometer is available, the turkey should be tested Test the turkey with a meat by moving the drumstick up and down. It should move easily in the hip'socket and the drumstick should feel soft when pressed The family cook is cautioned not to partly cook a turkey one day and con tinue cooking the next, the release says. This is one of the major causes of food poisoning. The chances of food spoilage are greatly increased and food spoilage organisms can quickly ac- cumulate on partly cooked food. A turkey should never be stuffed the day before it is roasted as it takes too long to heat the centre of the chilled dressing in order to ensure that any food spoilage organisms are destroyed. This may result in over- cooking the meat. Because of the in tisk of food spoilage associated with stuffed turkeys, many professional chefs cook the stuffing separately. If you do cook your turkey stuffed, be sure to remove the entire stuffing immediately after cooking. All leftovers should be cooled and frozen in small quantities as quickly as possible A cooked turkey should never be left on the kitchen table after carving but should be put either in the oven to keep hot or in the refrigerator to cool off properly creased For. further information about safe food handling practices contact the public health inspector at the Central Kootenay Health Unit Dinner meeting for WITT group Kootenay Women in Trades and Technology is having a general meeting and potluck dinner in Nelson on Oct. 15 at 5:30 p.m. at the Nelson Women’s Centre, $07 Hall Street, up: stairs from the Kootenay Country Co: op Store.
