ts CasthégarNews vecember 24,1906 Christmas food can tighten belt By JUDY CREIGHTON Canadian Press Not to ruin your Christ mas, but here's a little sober ing news for those who are watching their weight: an average serving of the tradi tional turkey with stuffing, gravy, potatoes, vegetables, rolls and dessert adds up to almost 2,000 calories. When analysed, that means you will be consuming, in one sitting about 48 per cent fat, 37 per cent car bohydrate and 15 per cent protein. Now we all know that the traditional turkey dinner is no diet plate. But by modify ing the meal, you can lighten the caloric load, decrease the fat and increase carbohydr ate and protein. In her cookbook Smart Cooking (Macmillan Canada, $14.95 paperback), Torontc nutritionist Anne Lindsay gives tips on preparing the roagt turkey while reducing fat “Avoid recipes for stuffing that use oil or butter,” she writes. “Instead of stuffing poultry, slip garlic slivers, fresh herbs, sliced fresh gin ger root under the skin between flesh and skin — or place in cavity.” Lindsay says you can stuff the cavity with apple slices, If you want to be extra careful, she said in an inter view, cut out butter, gravies, salad dressings and cream sauces because fats add up quickly “Dark meat of turkey has a higher fat content, and is also higher in calories,” Lindsay says. “And instead of putting onion wedges, and-or orange sections. “If making a bread stuff. ing, use fairly fresh bread, or moisten stale bread with chicken stock; add chopped onion, celery and apple in stead of oil or butter.” Instead of making gravy, serve pan juices with fat removed, Lindsay suggests.
