I felt exceedingly guilty, as I selected large porterhouse steaks, baking potatoes, fresh asparagus, romaine lettuce, shrimp, baking chocolate and heavy cream for my dinner party menu. “As I continued with my list of more mun dane, everyday items, I could not forget the scene I had just witnessed. Finally, I just gave up on the rest of my list and headed for the cashier The fun had gone out of the dinner party plans. As_I stood in line, my shopping cart piled high, I was thinking to myself “all this food for two people, and one dinner party!” The cashier was friendly. We had been shop- ping together for years. She smiled brightly and Said, “someone's going to have a lovely dinner!” I smiled wanly and allowed that “yes, I'm planning a din- ner party.” “Did you notice that corn is on special she asked. “Yes,” I replied, “but I think I have a full basket” She nodded in agreement and went on with her check- ing through the contents from my shopping cart, “That will be $127.46" she said, As I completed my. personal cheque I thought about the amount of food, the amount of money, and the tiny old woman | had watched, and, as a goose walked As I drove down the street from the supermarket to our house, | saw the old woman again. She was moving slow- ly along the sidewalk,-obvi- ously now enjoying the bright sunshine. She was looking at the flowering trees and the flowers in the boulevard As I came up beside her, she caught the sight of some children playing in the park and moved off toward a bench where she was obvi- ously going to sit for a while I continued along my way home, thinking about her and her shopping Suddenly, I realized I wanted to do something about what I had witnessed, if just a cup of tea and a smile. I 4 drove around the block and circled back. The bench was S empty. The woman was gone I checked the side streets No one. The children chat- tered noisily, the breeze waft ed through the flowering shrubs. I was filled with an incredible sadness as I drove slowly homeward I wish I could tell you that from that day forward I have been a prudent shopper, donating half my weekly gro- céry bill to the needy. In actual fact, it was a decade or more before I even remem- bered the incident It is true, that at some point in one’s life, for a brief moment, you witness some- thing that changes your per- spective forever. Today, I know there are many women . like the one I saw that day in the supermarket. Their lives are very difficult, and they are surviving on very little Having raised their chil- dren, they now take the last place in line behind the younger women with chil dren, for the children have been our priority. In glass measuring cup, cook butter on high for 1 minute or until butter is melted. 2. With wire whip blend in flour. 3. Add milk and blend with wire whip. 4. Cook on high for 7 to 8 minutes stirring once halfway through and once at the end. 5. Add salt to taste. ne Variations: ov Cheese Sauce: Use for eggs, broccoli, cauliflower, onions, macaroni Follow above white sauce recipe, blending 1/2 cup of sharp or medium cheese (grated) halfway through cook ing time. Season with a dash of paprika and dry mustard Curry Sauce: Use for eggs; broccoli, cauliflower, onions, green pepper Add | tsp curry powder and 1 tsp minced onion to flour before adding to butter. Cook as directed per white sauce Tecipe Egg Sauce: Use for fish, asparagus, green beans, cauliflower. Cook white sauce as directed. Add 2 chopped hard cooked eggs and 1 tbsp minced parsley, chopped caper or chopped pickles. Add 1 tsp lemon juice if desired. Mock Hollandaise Sauce: Cook thin or medium white sauce as directed, pour sauce over 2 slightly beaten egg yolks and mix thoroughly. Stir in 2 tbsp butter and 2 tbsp lemon juice; beat thoroughly and serve. Mustard Sauce: Add 1 tbsp prepared mustard to cooked white sauce Barbecue Sauce Cooked in microwave oven Temp: High = Cooking Time: 11 1/2 minutes Makes: 1 1/2 cups Ingredients: 1 tbsp butter 1 tbsp diced green pepper 2 Ig. cloves garlic, finely chopped 1 tbsp diced onion 1 - 8 oz can tomato sauce 1/4 cup red wine vinegar 2 tbsp brown sugar | tbsp worcestershire sauce 1 tbsp flour 1 tbsp water Directions 1. In a2 cup glass measuring cup or glass bowl, cook butter on high for 30 seconds or until melted. 2. Add green pepper, onion and garlic and cook on high 3 to 4 minutes or until onions are transparent. 3. Stir in remaining ingredients except for flour and water. 4. Cover: cook on high for 7 minutes or until bubbling, e stir once during cooking. : 5. Combine flour and water to make smooth paste 6. Stir into sauce and cook on high for 1 minute. Add to boiling liquid mixture stirring constantly with wire whip until gravy thickens Directions : Microwave 1. In glass bowl combine onion gravy mix, mushroom gravy mix and | tsp flour. 2. Add 2 tbsp fat, mix with wire whip 3. Stir in liquid 4. Cook on high for 10 to 12 minutes or until you have reached desired thickness. * 5. Stir once. (approx. 1/2 way through cooking time.)
