Her- sey, analytical chemist of Montreal, who analyzed the food alleged’ to have been sent to the troops in South Africa. He found the food only contained 17.55 per cent. of proteid, and, in reply to a question, said he did not ider this was d food at all; that concentrated food should contain at least 30 per cent. of pro- teid. 7 In his opinion Devlin’s food should be worth about 25 or 30 cents per pound, He said he thought a one-pound tin might do a soldier a day. Asked if it were possible to test food by its smell, as argued by Mr. Hatch, the maker of the Hatch pro- tose food, Mr. Hersey said it was impossible. An analytical test was the only way to tell its quality.
