With most self-cleaning ovens you simply latch the door, hit a button and go away. Within three hours the oven is clean, the dirt having been vaporized into smoke and the particles filtered out with a catalytic converter. On the other hand, if budget dictates a manual- clean oven, consider a model with a door that is easy to remove. * An important safety fea- ture that is often overlooked, according to Scaglione: Pull the oven racks all the way forward to see if they stop. You should not be able to pull them out all the way. Similarly, in some ovens you can actually put the shelves in backwards - a dangerous “feature” that can lead to dishes slipping off the racks when you pull them out quickly. Look for racks that “self-lock”’ so you can’t acci: dentally pull them out too far. + It may sound simplistic, but be sure to measure the size of your former range! Others fea- ture burners with a smaller diameter to eliminate over- lap when cooking on more than one burner. * Finally - and this is key - don’t forget to look for quality. Contrary to what some believe, quality is something you can see and hear. Pay attention to the sound of the door when it closes. Is it tinny, or does it sound solid and smooth? Pull out the drawer - all the way. Look at the quality underneath, Can you see the floor peeking through? Or is the construction undemeath solid? Listen to how it sounds as it rolls. Does it rattle? (It shouldn’t.) Does it roll easily? (It should). Remember that buying a major appliance is an invest- ment...but that it can also be fun.
