Asparagus Quiche
Oven: 3257

Time: 35 to 4U minutes
Pie Pastry for 1 crust nas

The Hen Party

1, Make: pastry and line one 9 or 10 inch pie plate

2/3 cup shredded cheddar cheese

2/3 cup shredded mozzarella cheese

12 cup chopped onion

2 1/2 cup cooked, chopped asparagus (chopped in | inch pieces)
3 beaten eggs

1 cup mil

2 tsp. flour

1/4 tsp. garlic salt or 1 clove garlic minced, or seasoning salt salt
and pepper to taste

1. Sprinkle 1/2 of the cheeses over the pie crust

2. Spread onion and asparagus over top of the cheese

3. Stir together the eggs, milk, flour and the seasonings

4. Pour over vegetables. Sprinkle the remaining cheese over all
5. Bake at 325 for 35 minutes. Let sit 10 minutes before serving

Fresh Pickled Asparagus

2 Ibs fresh asparagus

1. Cut the asparagus into 4 inch spears

2. Boil a pot of water big enough to hold the asparagus without
crowding

3. When water is boiling, add the cleaned asparagus spears and
let boil for 4 minutes. Drain well

Brine

2 cups boiling water

1 1/2 tbsp pickling salt

4 tbsp lemon juice or white vinegar

4 cloves garlic, salt

2 tbsp fresh dill or 4 or 5 springs fresh or frozen dill

I. In casserole dish, layer asparagus, dill and garlic

2. Mix the boiled water, salt and lemon juice. Cool slightly and
pour over the asparagus making sure all the asparagus is cov
ered with water

3. Asparagus is ready to eat next day
