If you can time it right, this is great served warm with ice cream. Cake Layer: 1/2 c. butter or margarine 1/2. c. sugar “Htsp? baking powder 254.41 +"™1/2'c? finely chopped nuts Topping: a 3 c. diced rhubarb 1c, sugar 3 tbsp. flour 1 tsp. cinnamon 1/4 tsp. nutmeg 1 tbsp. butter To make cake layer: Cream butter and sugar. Beat in eggs and milk. Stir in flour and baking powder and then mix in nuts. Spread evenly in a 13x9x2-inch baking pan. Topping: Mix together the rhubarb, sugar, flour, cinnamon, and nutmeg. Sprinkle evenly over cake batter. Dot with the butter. Bake at 350 F. for 35 - 45 minutes until bubbly and browned and rhubarb is tender. Makes 12 generous servings. eh Rhubarb Punch Instead of canning this, you can make half a recipe and just keep it in the fridge to use. And, if you're so inclined, an ounce of vodka is a nice addition to each glass, 32 ¢, fresh rhubarb cut in one-inch pieces 24 c, water ‘6c. sugar 1-1/2 c. lemon juice 2 - 16 ounce cans frozen orange juice concentrate Combine rhubarb and water in a large kettle. Cover, bring to a boil, reduce heat, and simmer until quite mushy. Strain. I put mine through my jelly bag. Retum juice to kettle and add sugar. Stir over low heat until sugar dissolves. Remove from heat and add lemon juice and orange juice concentrate. (Refrigerate it here, if you don't want to can it) Heat just to boiling. Pour into hot, scalded quart sealer jars. Wipe rims, put on lids, ‘and process in a boiling water bath for 10 minutes. To serve: Chill well. Shake. Fill a glass 2/3 full with punch and top it up with gingerale or 7-Up (and vodka). Makes nine quart jars.
