The egg is in the fridge because this person who wants it either bought a carton of them at the supermarket or, if they really know what they're doing and the best, they d them from their “egg lady". : I speak from experience of long years as an “egg lady” myself when I say that the “egg lady” is a long-suffering, hard-working, total- ly committed whacko. Who else would risk life and limb every single day when some dumb cluck decides she will not give up the eggs she's sitting on and, hanging onto the nest for dear life with all ber toenails and feathertips, viciously drills for blood in the back of the hand that feeds her? That same hand, holding three eggs, two of which are now cracked, that comes out of the nest with the outraged hen attached to it like a demented bulldog? Who else would tolerate several dozen feather- brains that shriek hysterically and run around in panic-stricken circles, ‘creating pileups that rival a bad day on a 16-lane freeway, simply because the person they're used to seeing three times a day popped out to the henhouse in her “town clothes” and they didn’t recognize her? ‘Well, not me. Not anymore. Of course, having gotten used to the best, it was imperative that I find my own “egg lady” which I did, and who, unfortunately, I had to leave behind when I migrated across the mountaintop. Three months later, not yet having found a local “egg lady”, and not especially impressed with the store-bought variety I had been forced to live with for what was beginning to seem like forever, a planned trip back to the other side of the mountaintop was a golden opportunity to stock up on farm fresh cackleberries, so I phoned and ordered “whatever you can spare, four, maybe five, dozen.” Then I went home, much pleased with my foresight in having han- died the matter so well. Of course, barely had I gotten home, when Nearest and Dearest drove in and said, with much pride, “Guess what, honey? I got two dozen farm fresh eggs today!” And those, combined with the six dozen my former “egg lady” went out of her way to provide for me, means it’s a real good thing we have a very large fridge. And lots of recipes like these two. +e Chiffon Nut Cake Unlike angel food cakes, chiffon cakes use up all of the egg so you don’t end up with a bunch of egg yolks left over. This cake is a beau- ty. I bake it often. 7 eggs, separated 1/2 tsp. cream of tartar 2-1/4 c. all-purpose flour 1-1/2 c. sugar 1 tsp. maple extract 3 tsp. baking powder 1c, finely chopped nuts 1/4 tsp. salt -- (pecans or walnuts) i+. ,. “About one hour beforehand, remove the eggs from the fridge and separate so they can warm up. In a large bowl, beat egg whites fora moment at high speed. Add cream of tartar and continue beating until whites are very stiff. In another large bowI, place the flour, sugar, bak- ing powder, salt, salad oil, cold water, egg yolks, and extracts. Beat at medium speed until smooth, Stir in nuts. Gently fold stiffly beaten egg. whites into batter. Don’t stir, just fold over and over. Pour batter into an ungreased 10-inch tube pan. Bake for 55 minutes at 325 F., then tum oven heat up to 350 F, and bake 20 minutes longer. Test cake by gently pressing top with finger, if it doesn’t spring back, bake five minutes longer. When done, invert pan and let cake hang upside down in the pan until completely cold. When cold run a thin-bladed knife around the cake to loosen it and remove from pan. Makes 10-12 servings, Brown Sugar Frosting This icing compliments the chiffon nut cake. 1/2 c, butter or margarine 1/2 c. brown sugar, packed 2-1/2 tbsp. flour 2-1/2 to 3-1/2 c. icing sugar 1/2 c, milk 1 tsp. vanilla or maple extract Melt the butter in a small saucepan and blend in the flour. Cook one minute, but do not brown. Stir in milk and cook until thick, Remove from heat and add brown sugar. Beat well. Beat in enough icing sugar to make frosting creamy. Stir in flavoring, Frosts a 10-inch tube cake. 1/2. salad oil 3/4 c. cold water 1 tsp. vanilla Perfect Baked Custard Always strain the custard mixture before you put it in the baking dish — unless you really, really like those yucky little stringy bits of egg. Geggs 4c. hot milk 2 tsp. vanilla Heat the milk. Combine eggs, sugar, and salt in a mixing bowl. Beat just enough to blend together. Add hot milk slowly and mix well. Stir in vanilla. Strain. Pour into a 1-1/2 quart shallow baking dish, Place in a pan of hot water and put the whole business in a 325 F, oven to bake for 45 minutes, Bake until just wavy firm, not solid, a knife inserted about two-thirds of the way to center should come out clean. When it’s to that stage, put the whole thing, pan of water with custard dish in it, on a wire rack to cool. The custard will continue to cook for a while after it comes from the oven. When cool to room temperature, take custard dish out of the water and put in fridge to chill thoroughly. Makes six to eight servings.
