Bake in a 375 degree oven 30-40 minutes Can be served hot or cold Avocado Cheese Snacks 1 ripe avocado 2 1/2 tbsp cream or natural yogurt 1 1/2 tsp lemon juice 1 clove garlic, minced 3/4 cup finely grated Cheddar cheese 1 1/4 tsp prepared mustard 1/2 cup fresh white bread crumbs 3 onions, finely chopped pepper, to taste 2 1/2 tbsp finely chopped parsley 1/3 cup toasted, chopped almonds 1. Mash the avocado flesh in a medium-sized bowl using a fork or small potato masher 2. Stir the cream or yogurt, garlic, lemon juice, grated cheese, mustard, breadcrumbs, onions and pepper into the mashed avocado. Mix together well with a fork until a stiff paste results. 3. Roll teaspoonfuls of the avocado mixture into small balls. 4. Roll half the balls into the finely chopped parsley pressing it gently into the surface to coat thor oughly. Roll remaining avocado balls into the almonds in the same manner 5. Refrigerate the coated snacks for | hour before serving NOTE: Keep the mixture cool when preparing If you have difficulty forming the mixture into small balls, put in fridge for 30 minutes Mini Quiche Temp: 400 degrees Time: 15 minutes 24 tart shells 6 slices bacon (cook and crumble) 2 eggs 1 cup cream 1/2 tsp salt 1/8 tsp nutmeg dash cayenne pepper dash of pepper 2 tbsp soft butter 3/4 cup grated swiss cheese 1. Beat eggs, cream and spices 2. Spread bottom of shells lightly with butter 3. Sprinkle each with bacon bits, then cheese, fill with egg mixture 4.
