In many parts of Canada, the sap of the sugar maple is drip-dripping into pails. ready to be carried to the sheds tna evaporated into maple syrup. The flavor of this incom- parable “sweet” is universally popu- ler. 1 understand that soon all maple syrup will be made by an- ether method. The maple sap 1s heatea for two hours under at- mospheric pressure causing the water to evaporate. The result is a dark syrup concentrate. from 4 to 6 times stronger than the origi- nal.
