Smart British Columbians have a healthy respect for our driving conditions, particularly in the mountains. Add the uncertainties of the movements of wild animals, such as elk and deer, a sudden storm, and a dark night, and driv ing can become a-harrowing experience Having driven the Crowsnest Highway numerous times in the past two years, I never set out without the expectation of trou- ble, though my driving troubles have been experienced here at home Is it just me, or have we become even worse drivers than usual? In the past several weeks | have seen local drivers commit some senous errors, without inci dent. They were surely an acci dent looking for a place to happen! Tales are told about the hor rors of driving in Los Angeles or Paris. Some claim New York drivers are the worst, while oth ers point to Rome and Cairo. West and North Vancouver drivers must be among the most courteous. Having become accustomed to. this state of cour- * tesy, | was not prepared for driv- ing in the Fiji Islands. Nothing could prepare you for driving in Fiji! The narrowness of Fijian roads did not daunt us, for we had experienced them on the nar- row, one land “tracks” of out- back Australia, where meeting vehicles one keeps one wheel on the track and one on the shoul- der, each sidling past More daring drivers do this at top speed and on gravel tracks in the dust! Most of the roads in Fiji are narrow and paved, but wind sinuously around the bays, inlets, and mountains—fol- lowing the natural precipitous topography of the land. Progress can be very slow There are no passing lanes. One can get stuck behind a slow moving lorry (truck), usually heavily laden, groaning up and down the hills. When sugar cane is being shipped to the sugar mills, cane trucks are added to the usual hazards. Cane stalks are cut wider than the “tray” (deck) and stick out on both sides of the lorry, further obscuring your view. Cane trucks get bunched together, impossible to pass without a long, unob structed passage, of which there are few. Once caught up in a Jong line of cane trucks, you are assured of a slow passage all the way to the mill entrance In Fiji, cows, goats, pigs and chickens forage along the road side. There are numerous dogs that have no fear of vehicles. Fijians work and play along the highway, for thesé ate places for commerce and parties, and few walk on the edge of the road. Saute onions and garlic in butter. 2. Stir in spinach 3. Line a 10” springfonn pan with pastry; making sure it over laps the sides. 4. Layer 1/2 the ham, 1/2 the cheese 5. Pour in 1/2 the beaten eggs. 6. Repeat layer—pan will be full 7. Cover with pastry and pinch the edges to seal 8. Trim excess pastry and slash the topt to allow steam to escape 9. Brush top crust with beaten egg 10. Bake at 400F for 15 minutes, then reduce heat to 350F and-bake for 45 minutes. If the crust becomes too brown, cover lightly (don't seal) with foil 11.
