In an article published in the British Medical Journal, Dr. Douglas Model, a spec- ialist in general medicine at Eastbourne District General Hospital, said his findings could be important in anti- smoking campaigns. “In_my experience, many people notice the ravages of smoking for the first time when it is pointed out to them that they can be iden- tified by their faces alone,” he wrote, The journal, the main re- search magazine of the Brit ish Medical Association, ac- companied Model's article with photographs of nine people, inviting readers to pick the smokers. Among them were two well-known personalities, the late American actor William Holden and the late British poet W.H. Auden, both of whom smoked and had deep- ly lined faces. Mode! said his survey con- firmed earlier findings that “cigarette smoking causes readily recognizable wrinkl- ing and other changes to the face of many people.” He said changes in the color and quality of the skin “suggest a toxic process.” Other studies show cigarette smoking rec circulation to the skin in humans and mice, the doctor noted. WEIGHT TRAINING His article said three pre- vious studies indicated a link between cigarette smoking and wrinkling and other changes in complexion. Model conducted the sur- vey to determine whether smokers and abstainers could be distinguished on the basis of facial features alone, he said. Smoker's face is similar to changes in appearance caused by aging, but Model said the average age of those with and without_ smoker's face was similar: 53.8 and 52 years respectively. There was no significant difference between the two groups in exposure to the sun, alcohol consumption or other factors known to cause wrinkles, lines or changes in skin color, he said. But, like that first kil ometre on the track or that first length of the pool at full-out speed, your first en counter with a barbell or a Nautilus machine can be mighty intimidating — and, if you don't know what you're doing, injuriops. And these days, jud- ging by the phenomenal growth of female bodybuild. ing and the increasing num- ber of coed gyms, many 90-pound weaklings want to be she-women. But only recently has some semblance of science come to the field of resistance train. ing. Where it was once a pastime for brutes, weight. lifting and its related acti. vities now are elements of just about all good exercise plans for all sizes and shapes of athletes. , Dr. William Stanish, a Halifax exercise physiologist, lists three criteria for ef- fective weight training: it must be tailored to a specific sport, monitored constantly by experts and performed painlessly. “And one other important thing,” he sayd. “It must not be boring.” There are several phases to strength building: e Analyse the activity you are training for and-develop a series of strenuous exercises that will improve that ac tivity. MYTHS ABOUND Many myths still abound Do weightlifters need more protein? Not likely, says sports medicine studies. A well-balanced diet, with an emphasis on carbohydrates, will ensure that the body bulk produced by the train- ing is mostly muscle and very little fat. Forget about those milk shakes with eggs to augment muscle building. Stanish told a recent sports medicine symposium in Toronto that people lose one per cent of their strength each year once they turn 26. But he says just about anyone can train for strength — even children. “I personally do not feel strongly about keeping kids ~ away from weightlifting pro- grams, as long as they are properly supervised,” he says. The biggest problem, he says, is that the shoulder is one of the parts of the body most susceptible to injury Even though many say the knees are the most vul nerable to damage, “I find the shoulder the most unfor giving part of the body,” Stanish says. Expo plans varied menu quality that his real occupation — executive chef — becomes obvious. Stauber runs the show at Expo 86's food commissary. He knows every imaginable detail of what people will eat in the 20 or 90 restaurants Expo itself will operate on the world's fair site in downtown Vancouver. Even the prices are already established — for example, 95 cents for potato cheddar soup, $3.75 for a hot roast beef sandwich, and 75 cents for apple Danish pastry. “Excellent prices,” says Stauber, whose enthusiasm bubbles like his cauldrons of soup. “All our restaurants will be family oriented and every location will have a different menu. We're going to have everything from Japanese to Mexican, from California- western to 1950s funky. We'll even have a sushi (raw fish) bar.” In addition to the Expo restaurants, the fair will have 35 to 40 food outlets run by independent operators, and at least eight of the international pavilions will have their own restaurants, so the 70-hectare site could have 65 to 70 restaurants and fast-food outlets. LARGE CAPACITY Until a few months ago an old steel manufacturing plant, the Expo commissary is a huge, gleaming, well-equip- ped kitchen capable of catering to an army. Swiss-born Stauber has worked for major hotel chains all over the world and came to Vancouver in 1968 to work for White Spot. Since then, he’s done bverything from catering- for oil exploration ships in the Beaufort Sea to master. minding the food for the Ca#hda Winter Games in Lethbridge, ‘Alta. He's been with Expo since March and it's his fair. “Cooking’s my game,” says Stauber as he patrols the commissary, inspecting chocolate eclairs, chatting with chef Hannes Tischhauser, and discussing recipes with Sheena McLeod, supervisor of quality control.
