HERE AND THERE WITH ARLEE Did you miss me? The column gave way to more important and interesting items last week and I for one was glad. It was def- initely in a rut — not that it is out of the rut but a change is as good as a rest, they say. But it was very nice to have people ask where it was. Went to Commissioners meet- ing last week — you no doubt read all about it in the paper. Those commissioners certainly have their hands full and as far as I can see are really getting things done. Castlegar is a nice little town and according to the present picture is getting nicer all the time. Well, the Easter Bunny has come and gone and everyone is happy and now we can put “Eg- bert” back into moth balls along with “Rudolph” and “Frosty.” Easter ‘felt like Easter this year — it was nice going to church again. If you’ve been a regular reader of this column, Bi will see that I am one of ose. .awful people who go to church only on Christmas —New Years and Easter. I really have better intentions, but I’ve been told there is a certain road pav- ed with those things. Ah me! T'll have to reform. The Easter Choral Service at the United Church was lovely though, the choir looked so nice and sang so well and J. Dalziel and O. Aasland sang a solo each and a duef that just made me hold my breath. Music certainly fills a big place in our lives doesn’t it? . We have been working out in the yard lately raking and cleaning up. The brave little flowers already growing seem so relieved to get those wet sticky leaves off their heads. That may sound silly, but it is the way I feel. I watched the Pub- lic Works Department at Vic Jones’ push down two huge trees iff a few minutes this morn- ing that must have taken forty years or more to grow. The wheels of progress must turn and roads must be made, but golly — it just hurts to have to watch it. Brown in 2 tablespoons savory meat fat, Add % cup minced onion, 1 cup small-diced new turnip, 1 cup thin-sliced car- rot rounds, 1 cup diced celery, 1 tent, 1 cup canned tomatoes, 3 thin slices lemon cut in quarters. and 1 bayleaf. Transfer to a casserole. Add boil- ing water to cover. Put on a lid: bake 1% to two hours in a mod- erate oven, 350 F., or until the meat is tender. Then top with springtime biscuits cut in 2-1nch rounds. Increase the heat and bake 20 minutes more. Springtime Biscuits: To the flour or mix for 1 recipe baking powder biscuits, add % cup fine-grated carrot, 1 tablespoon minced pars- ley. 1 tablespoon chopped chives and % teaspoon thymg. Finish as usual. Spring Mince Pie Line a shallow 9-inch -pie plate with pie pastry. Dust with 2 tea- spoons bread crumbs and press them in, Fill with spring mince filling. Fit on the top crust; press the edges together with the tines of a fork. Slash to allow the steam to escape. ‘Bake 10 minutes in a hot oven, 400 F. Then reduce the heat ‘to 375 F. and bake 25 minutes longer. Spring Mince Filling: Peel and fine-chop 1 1b. apples: wash and small-dice 1 ib. unpeeled tender rhubarb. Combine ~and add the grated rind and pulp one orange; tHe juice of % lemon, | cup raisins, cup currants, ¥% cup chopped citron, 2% cups brown = sugar, % cup water. % teaspoon nutmeg and % teaspoon each cinnamon, clove and allspice. Stir and simmer 30 minutes. Makes enough for three (g-inch) pies. Keep 2 weeks under refrigeration. Trick of the Chef ‘ry pickled beets on lettuce with Pickle relish French dressing; sprinkle with minced hard-cooked cup thin-sliced squash if conven- egg. Yes!! atthe...
