There are more than 500 ~

different names of macaroni,
with different sizes and shapes.
Whether shaped like bow ties,
shells, stars, crosses, wheels,
tubing, atrings or ribbons, all
are made with the same basic
formula.

The best macaroni is made
of semolina, milled from durum
wheat grown in the Dakotas,
Minnesota and Montana, I
learned on a tour of the Prince
factory in Lowell. This durum
wheat originated in Russia and
was brought to the United
States in 1900.

The caratonoid pigment in
semolina gives macaroni its
light amber color. Inexpensive
macaroni utilizes more flour
than semolina and is whiter and
more brittle, Mr. -Pellegrini
explained. t

Arriving in New York from
Sicily, at the age of 16, he was
involved in the wholesale gro-
cery business before buying the the
Prince company. During the
early days he and his wife lived
in an apartment built right into
the plant, frequently working

A new, thin spaghetti is
not on the market yet, but it
will cook quicker, and you will
get more servings. Mr. Pelle-
grini said. It will take one
minute of cooking for al dente,
two minutes for medium done,

Fan out spaghetti in boil-
ing, salted water. Stir, cover,
and bring to boil again, then

‘immediately turn off heat. Let,

pasta stand in water 2 minutes
then drain, return to same pot
with 4 pats of butter or olive oil.

* Toss well to coat pasta
with butter and cheese then
add sauce. Mix well and saute

waterfalls provide a unique
European atmosphere and Mr,
Pellegrino has brought many
treasures from Italy, including

_workmen who have produced

"unusual hand-wrought iron and
tile decorations.

The menu, includes tradi-
tional Italian dishes and con-
tinental cuisine as well as basic
dishes for the unsophisticated
diner. I enjoyed a superb tripe
dish with a fresh tomato sauce
and a dist of green and white‘
noodles a la Romano. .

Mr. Pellegrino suggested
anchovies as an appetizer, pre-
pared a favorite way with vai,

' vinegar ‘and seasonings, then

rolled-up before eating. They
were excellent. For dessert, al-
though it was. unnecessary, I
‘sampled a specialty of . the
house, a delicious apple-cream
pie with just a hint of orange.

When Mr. Pellegrino was
dJooking for a chef recently, he
closed the restaurant for eight
monthg until he found just the

-right person, an indication: of

hie high standards. Chef Ad-
riano Urrao is also the manager
of the restaurant, which has
several: adjoining rooms and.
seats about 400.

Here is a recipe for pre-

Pellegrino’s private family way
of cooking it. It saves energy,
never sticks, and. will never

. become cloudy and tacky the _

way it will if boiled, he says.
