We had put in a late night at the office, a really, really late night at the office. : : ‘When we finally did get home, instead of calling it a night and going to bed like sensible people, we tumed on the television, Of course at 3 am. television choices are somewhat limited. So it was with some ii that we found ing a movie, A really, really good movie. . A movie that was so good, that all thoughts of going to bed simply vanished without a trace. Out came the cookies, which more or less replaced the sensible decision that should have been made at that point. Not a bad substitution I might add. : Neither of us had seen this particular movie and before long, the issue of the new day's early moming hours was what-in- heck-is-the-name-of-this-thing? Finally, we thought, now we will find out the name of this movie. ‘What else can be left to put on the screen? As it tumed out, there was nothing left to put on the screen. So we fought over the last of the cookie crumbs, kicked the cat, yelled at the dogs, went to bed for the 33 minutes remaining before the alarm went off and vowed to never, ever to do that again. Which is why I make sure that I always bave rolls of these refriger- ator cookies in the freezer. So we can have fresh cookies at a momen- t's notice -- especially at three in the moming when a really, really good movie comes on that we now know we will never know the title of. ae ® My Mother's Refrigerator Spice Cookies At home, these were just called Refrigerator Cookies. Mom made them and Grandma made them. It wasn't until I had a home of my own and began reading cookbooks that I discovered there were other refrigerator cookies in the world. These are still ths best though. Crisp and perfect for dunking: 2c. butter or margarine 1c. brown sugar, packed lc. granulated sugar 1 tsp. baking soda 2 tbsp. hot water tsp. cinnamon 1 tsp. mace 1 tsp. nutmeg, 4-1/2 c. flour Cyeam the butter and the sugars. Stir the soda in the hot water to dissolve and then blend into the creamedmixture. Mix in the spices and then the flour. The best way to do this is to roll up you sleeves and dive in there and do it with your bands. Divide the dough into four equal pieces. Shape each piece into a log about 12-inches long. Roll each log tightly in waxed paper, twisting the ends of the paper closed to seal. Chill until firm before slicing and baking. The dough will keep in the fridge for a week or so, or you can overwrap the rolls with foil and store in the freezer for up to six months. To bake: If the rolls are frozen, unwrap and let stand at room tem- perature for 10-15 minutes. Cut the rolls in slices about one-third of an inch thick and lay on ungreased baking sheets. The cookies will spread and become larger while baking so leave some room between them. Bake at 350 F. for 12-15 minutes, just until nicely browned. Remove baked cookies from pans and place on wire racks to cool. The entire recipe makes about 12 dozen cookies, or three dozen per roll.
