As a matter of fact, it would probably be betler if most individuals cut down on the amount of salt they tonsume. As a guideline, start with '% tsp. of the spice or herb to 2 cups of soup of juice, four servings of vegetables, or a pound of meat. However, start with far smaller quantities when using red pepper. Melt the butter over low heat and add the curry powder and chopped onion and celery. Saute for about five minutes. Next, stir in the flour and blend well. Gradually add the chicken broth, stirring until you have a Susan Mackintosh smooth thick sauce. Add the turkey and the sour cream. Be careful not to boil so as not to curdle, the sour cream. If you are worried about this dish boiling transfer it to a double boiler with the water barely simmering. Serve with hot rice. *“ 8 «© Turkey Turnovers This recipe makes 12 turn- overs which can be served hot or cold: Enough pastry for a double crust nine-inch pie 1 cup finely chopped cooked chicken 1/2 cup finely chopped celery 2 chopped hard cooked egg 2 tbsp. chopped green pepper 1 tbsp. lemon juice 1 tsp. salt Pepper 1/2 cup mayonnaise (1/2 tap. mace and 1/2 tsp. thyme) optional Roll out the pastry and cut into 12 fivesinch circles. Com- bine all ingredients. You may need a little extra mayonnuise. Divide filling be- tween pastry circles, Moisten edges of pastry. Fold over to form semi-circles.
