They are very simple to make, and can be used to fill a variety of needs, A souffle is a great Jun- cheon dish, or a quick light supper. They are especially versatile, as the ingredients are always available, I either have a souffle as . one of the courses in a lar; dinner, or as a meal in itself with a good bread and salad, A souffle dish is nice to have, but certainly not essen- tial. For years I just used a straight-sided casserole dish. For the following. recipe you need a six-cup dish. Cook together without brown- ing for two minutes, Remove from heat and when mixture has stopped boiling add 1 eup . bolling Beat with a wire whip until well blended. Return to a moderate heat and add 1/2 tsp. salt, 1/8 tep. pepper, a pinch each of cayenne and nutmeg. Remove from. heat and separate 4 eggs, placing the yolks in the sauce mixture and the whites in a bowl. Stir the sauce mixture after each addi- tion of the egg yolks. Separate , one more egg, but do not. put se TIHE-AND. AUTOMOTIVE-GENERES = the yolk in the sauce, save it to bake with or feed it to the dog, or whatever. Do add the white to the previous four. . You may prepare the souf- fle ahead to this point. Just put alid on the pot and rewarm it to tepid before continuing. Grate 3/4 cup swiss cheese {8 ozs.), Beat the five egg whites with a pinch of salt until they are stiff. (The only thing here is, do not uso a blender for this, as the egg. whites do not gain the required volume in a blender.) Stir in one-quarter of the egg whites into the sauce. Stir in all but.one tablespoon of the cheese. Carefully fold in the remaining egg whites. You will not get a perfect blend. If you ‘ try to get everything mixed too perfectly, you will deflate the whites, Turn into the ‘souffle dish and top with. the romaining ' cheese. . Put ina preheated oven. Immediately turn . the oven down to 876° and bake. for ahout 25 minutes or until the top is brown. If you like’ your souffles firm, bake.an extra five minutes. Serve immediately, as souffles do not wait well. Variations - ‘Vegetable Souffles Before’ making the sauce ' base, prepare. the vegetable. You may use mushrooms, broc- coli, artichoke hearts, or aspa- ragus tips, T will use spinach as an example. In 1 thep. “butter, “cook 1 tbsp. minced green onion. Then add 3/4 cup chopped spinach. Stir. over moderate heat to cook and remove as much moisture as ‘possible, Then proceed as for the cheese souffle, adding the spin- ach after the egg yolks. Use only 1/2 cup of cheese.
